Healthy Cashew Salmon with Apricot Couscous

Ingredients 4 servings ½ cup nonfat plain yogurt 3 scallions, sliced, greens and whites separated 2 tablespoons lemon juice 2 tablespoons chopped fresh cilantro ½ teaspoon ground cumin ¾ teaspoon salt, divided ½ teaspoon freshly ground pepper, Preparation (Ready In 35 min) Preheat grill to medium-high or position rack in upper third of oven and preheat broiler. Combine yogurt, scallion greens, lemon juice, cilantro, cumin, ¼ teaspoon salt and ¼ teaspoon pepper in a medium bowl. Set aside. Heat oil in a large saucepan over medium heat. Add apricots, ginger, the scallion whites and ¼ teaspoon salt. Cook, stirring, until softened, about 2 minutes. Add water and bring to a boil over high heat. Stir in couscous. Remove from heat, cover and let stand until the liquid is absorbed, about 5 minutes. Fluff with a fork. Meanwhile, rub salmon with the remaining ¼ teaspoon each salt and pepper. HOW TO MAKE EGG FRIED RICE WITH SOY SAUCE

EGG FRIED RICE WITH SOY SAUCE Ingredients 2 eggs 2 cups cooked Basmati rice 1 cup of spring onions with greens1 cup of onions 2 tablespoons oil Salt to taste White pepper powder to taste 1 tablespoon soy sauce Method 1. Finely chop spring onion bulbs with greens. 2. Heat 1 tablespoon oil in a non-stick pan. Break eggs and add along with salt, pepper powder and 1 tablespoon chopped spring onion greens, scramble and cook till fully done. Remove from heat and set aside. 3. Heat remaining oil in another non-stick pan. Add chopped spring onion bulbs and sauté till golden.  4. Add rice and toss to mix. Add soy sauce, salt and pepper powder and toss to mix. 5. Add scrambled eggs and remaining spring onion greens and toss to mix on high heat.  6. Serve hot garnished with some chopped spring onion greens. Adventure in Africa!

Landing in Africa was quite a shock, never thought I'd have this once in a lifetime opportunity to set my feet in the world of Africa. I was there to volunteer for a month to do conversational work, bonding with the animals, observing their animals and much other activities.  It was night and other volunteers and I were driving to the lodge where the volunteers stay and the first animal i saw was a Giraffe. He was there just eating and walking by, as I have observed my time in Africa, they are very curious animals and look at you with deep dark eyes wondering what kind of creature you are to them. We arrived at the lodge and went to bed right away due to the long flight that we had to take (Dublin - Dubai (7 hours) then Dubai - Harare (7 hours) plus a 2 hour drive).   The next early morning we all had to wake up at 6 and be ready by 6:30, starting from that time we do work with animals whereas we bond with them, teach them new tricks and walk with them back to the...
